Let's face it, I love quinoa! Any way I can incorporate it in my recipes, I am one happy gal. So when I came across a Quinoa Parmesan Recipe from Damn Delicious, I just knew I had to give it a try with my own unique twist. I figured, what else would pair perfectly with chicken? Why pesto, of course! And thus, my Quinoa Crusted Chicken with Pesto recipe was born.

Ingredients
- Kitchen & Love Basil Pesto Quinoa Quick Meal
- 2-3 boneless skinless chicken breasts
- 1 TBS Italian Seasoning
- 2 eggs
- 1 cup flour
- 1/4 cup shredded mozzarella cheese
Directions
- Preheat oven to 400F
- Open the quinoa cup from the quinoa meal and place in a medium sized bowl
- Add the tablespoon of Italain seasoning to the quinoa and stir
- In a small bowl, beat the 2 eggs
- Place the flour in another small bowl
- Coat the chicken breast thoroughly with flour
- Dip the floured chicken in the eggs
- Coat the chicken with a layer of Italian seasoned quinoa
- Place on a greased baking sheet
- Repeat with remaining chicken breasts
- Bake for 20-25 minutes (depending on the thickness of the chicken)
- Top the baked chicken with mozzarella
- Bake for another 5 minutes or until cheese is fully melted
- Pour the pesto from the Quinoa Quick Meal onto the chicken
- Enjoy!
