Spicy Quinoa Balls
If you like spicy, this is the perfect gluten-free, meatless ball you will ever eat. It is a versatile meal that can be enjoyed all by itself, in a pita or on top of some spaghetti. Carbs on carbs is always an option. This recipe has more ingredients than I usually use to make a recipe but the result is oh so satisfying and delicious.

Ingredients
- Kitchen & Love Spicy Jalapeño Quinoa Quick Meal
- 3/4 cup Italian Cheese Blend
- 2 sun-dried tomatoes, diced
- 2 egg whites
- 3 tbs coconut flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
Directions
- Preheat oven to 400°F
- Open the quinoa cup from the Quinoa Quick Meal and pour it into a large bowl
- Mix the coconut flour, salt, pepper, and garlic powder together
- Add the dry mixture to the quinoa and stir
- Add the Italian cheese blend, 2 diced sun-dried tomatoes, and 2 egg whites
- Stir everything together
- Line a baking sheet with foil or parchment paper
- Just make sure it's non-stick
- With your hands, form 6 quinoa balls
- Bake for 30 minutes or until golden brown
- Place the cooked quinoa balls on a plate and top with the Spicy Jalapeño sauce from the Quinoa Quick Meal
