Quinoa Breakfast Bites
Quinoa for breakfast? Believe it or not, quinoa is great anytime of the day. Why not start your day off right with a superfood packed with protein and fiber to help you have a super day? This recipe is a savory and spicy breakfast treat that is a nice alternative to an omelet or the regular eggs and bacon. I used the Spicy Jalapeño sauce from the quinoa meal as a topping for the Quinoa Breakfast Bites like frosting on a cupcake. Just another way to enjoy the most important meal of the day!

Ingredients
- Kitchen & Love Spicy Jalapeño Quinoa Quick Meal
- 1/3 cup egg whites (2 eggs whites)
- 1/3 cup chopped spinach
- 1/2 cup shredded mozzarella cheese
- 1 clove garlic (minced)
Directions
- Preheat the oven to 375°F
- In a medium sized bowl, place the quinoa from the quinoa meal
- Heat the quinoa up for about 1 minute in the microwave
- Add the mozzarella while the quinoa is still hot and stir
- Make sure the mozzarella is melted
- Add the spinach, egg whites, and garlic
- Stir until all the ingredients are combined
- Spray a muffin pan with non-stick spray
- Place the mixture into the muffin pan
- Bake for 25 minutes
- Place the quinoa breakfast bites on a plate
- Top off the bites with the Spicy Jalapeño sauce from the Quinoa Quick Meal
- Enjoy!
