Spicy Taco Bake

Ingredients

  • 1.5lbs ground beef 1 jar
  • Cucina & Amore Fire Roasted Yellow Pepper Salsa
  • 1 cup black beans
  • 1/2 cup Mexican Cheese Blend
  • Cucina & Amore Tricolor Jalapeños (optional)
  • Tortilla Chips
  • Cucina & Amore Robusto Extra Virgin Olive Oil

Directions

  1. Heat a skillet to medium heat
  2. Coat the skillet with Robusto Extra Virgin Olive oil
  3. Add the ground beef to the heated skillet and cook until browned
  4. Drain the ground beef of any extra juices then return to skillet
  5. Under low heat, add the entire jar of Fire Roasted Yellow Pepper Salsa to the ground beef and mix well
  6. Preheat oven to 375°F
  7. In a baking dish, add a layer of tortilla chips
  8. Add a layer of mixed ground beef & yellow pepper salsa
  9. Add a layer of 1/2 cup black beans
  10. Add a layer of 1/4 cup Mexican Cheese blend
  11. Add another layer of tortilla chips
  12. Add another layer of mixed ground beef & yellow pepper salsa
  13. Add another layer of 1/2 cup black beans
  14. Optional: Add a layer of Tricolor Jalapeños for an extra spicy kick
  15. Top it off with 1/4 cup Mexican Cheese blend
  16. Bake for 20 minutes
  17. Enjoy!

Let's face it, Quinoa is delicious! You can do a lot of different things with this superfood. You could have it for breakfast, lunch, dinner, AND dessert! It's amazing how versatile quinoa can be with the ingredients that you choose to cook or bake with it. A perfect example..

Ingredients

  • Quinoa Brown rice (optional)
  • Jennie O's Italian Seasoned Ground Turkey
  • Cucina & Amore Fire Roasted Yellow Pepper Salsa
  • Cucina & Amore Fire Roasted Red Pepper Salsa

Directions

  1. Cook the entire package of Italian Seasoned Ground Turkey on a skillet until all of the meat is fully cooked and browned
    • You don't need to grease the pan because the juices from the ground turkey should be enough
  2. Drain the ground turkey then put it back on the skillet
  3. Take the cooked quinoa and brown rice and mix it together
    • You can use already cooked quinoa and brown rice
    • I used a mixed bag of quinoa and brown rice pouch that required 90 seconds in the microwave to cook it (I used 2 pouches of mixed quinoa and brown rice)
  4. Add the mixture of cooked quinoa and brown rice to the ground turkey in the skillet
  5. On low heat, stir the quinoa, brown rice, and ground turkey until they are mixed thoroughly
  6. In 2 medium-sized bowls, separate the mixture equally
  7. In 1 bowl, add the Fire Roasted Yellow Pepper Salsa
    • Add as much as you'd like. I used enough to see the quinoa and brown rice turn a little yellow
    • The Fire Roasted Yellow Pepper Salsa is a savory salsa with it's main ingredient of yellow pepper. No tomatoes found in this salsa! 
  8. In the other bowl, add the Piquillo Pepper & Passion Fruit Salsa
    1. Add as much as you'd like. I used enough to see the quinoa and brown rice turn a little red
    2. The Piquillo Pepper & Passion Fruit Salsa creates a sweeter, tropical taste that blends surprisingly well with the Italian seasoning from the ground turkey
  9. Serve separately or together on one plate
  10. Enjoy!

Fire Roasted Yellow Pepper Salsa Chicken

For me, one of the most satisfying feelings is knowing that I finished something. When I know that I was able to commit and do my best to make it all the way to the end. Sometimes this feeling can be achieved when finishing a book, a workout, or in my case, an entire jar...

Ingredients

  • Chicken breast
  • Cucina & Amore Fire Roasted Yellow Pepper Salsa

Directions

  1. Preheat the oven to 375°
  2. Bake the chicken breast on one side for 8 minutes (depending on the thickness of the chicken breast, it could be longer)
  3. Flip the chicken breast over, add the Cucina & Amore Fire Roasted Yellow Pepper salsa on top (add as much or as little as you like)
  4. Bake the chicken breast for another 8 minutes
  5. Enjoy!
