  • 1/2 diced avocado


  1. Clean the Romaine lettuce leaves
  2. Scoop the ready-to-eat quinoa (from the quinoa meal) onto the clean Romaine lettuce
  3. Add the pieces of rotisserie chicken breast

  • 1/2 cup Black Beans
  • 1/2 cup low fat Cottage cheese
  • 1/2 cup Mexican Cheese Blend (shredded)


  1. Preheat oven to 350°F
  2. Cut each zucchini in half
  3. Microwave for 5 minutes
  4. Scoop out the inside of each zucchini
  5. Place zucchini boat into a 9x13 baking dish
  6. In a medium bowl, mix together the quinoa, black beans, cottage cheese, and jalapeño sauce
  7. Scoop the quinoa and black beans mixture into each zucchini boat
  8. Top each zucchini boat with as much cheese as you like
  9. Bake for 40 minutes

  • 2 sun-dried tomatoes diced
  • 2 egg whites
  • 3 tbs coconut flour
  • 1/2 tsp salt

  • 1/2 tsp garlic powder


  1. Preheat oven to 400°F
