For genuine condiments like Cucina & Amore Condimento di Modena, Italian I.G.P., grape juice from freshly crushed local white grapes is used to create a slightly acidic-sweet, well-balanced, bright condiment known as Condimento Bianco di Modena.

Grape must is cooked slowly in small batches at low temperatures, a process responsible for giving the vinegar its smooth, well-balanced taste. The caramelized sugars produce a dark and rich colored motto cotto naturally, without any added colors. Once the motto cotto is blended with red wine vinegar and fermented, it is aged in wooden oak barrels to its intended flavor profile. This extensive process results in an authentic fine and Balsamic vinegar with a density not less than 1.35. A true delight for your palate!

A premium Balsamic Vinegar like Cucina & Amore Aceto Balsamico di Modena, Italian I.G.P. is crafted based on traditional methods. Grape juice from freshly harvested local grapes is cooked to create a sweet and fragrant concentrated grape must. The must is blended with wine vinegar to create a fine young balsamic vinegar, which is then stored on site in wooden barrels. Through natural evaporation and acetification, the vinegar matures over time to the desired flavor profile of a premium balsamic vinegar with a density not less than 1.17.

For a genuine condiment like Cucina & Amore Condimento di Modena, Italian I.G.P., white grape juice from freshly harvested and crushed local white grapes is concentrated. Blending white wine vinegar in the concentrated juice, or must, creates a slightly acidic-sweet, well-balanced clear, bright condiment known as Condimento Bianco di Modena with a density not less than 1.07.
