“Extra Virgin” also conveys that the oil is free of defects in flavor or odor. This is evaluated by a trained sensory panel and cannot be detected by laboratory tests.

Unlike wine, extra virgin olive oil does not need time to mature. The best time to taste extra virgin olive oil is when it is first pressed and provides the best health benefits when it’s fresh. Extra virgin olive oil should be purchased within 18 months of its harvest date and used up within six months of opening when stored it in a cool, dark place.
