Ingredients
- 1.5lbs ground beef
- 1 jar Cucina & Amore Fire Roasted Yellow Pepper Salsa
- 1 cup black beans
- 1/2 cup Mexican Cheese Blend
- Cucina & Amore Tricolor Jalapeños (optional)
- Tortilla Chips
- Cucina & Amore Robusto Extra Virgin Olive Oil
Directions
- Heat a skillet to medium heat
- Coat the skillet with Robusto Extra Virgin Olive oil
- Add the ground beef to the heated skillet and cook until browned
- Drain the ground beef of any extra juices then return to skillet
- Under low heat, add the entire jar of Fire Roasted Yellow Pepper Salsa to the ground beef and mix well
- Preheat oven to 375°F
- In a baking dish, add a layer of tortilla chips
- Add a layer of mixed ground beef & yellow pepper salsa
- Add a layer of 1/2 cup black beans
- Add a layer of 1/4 cup Mexican Cheese blend
- Add another layer of tortilla chips
- Add another layer of mixed ground beef & yellow pepper salsa
- Add another layer of 1/2 cup black beans
- Optional: Add a layer of Tricolor Jalapeños for an extra spicy kick
- Top it off with 1/4 cup Mexican Cheese blend
- Bake for 20 minutes
