Mediterranean Flatbread
Artichokes are an acquired taste. They also just happen to be a delicious topping to take the boring to extraordinary. You can add artichokes to salads, sandwiches, pastas, pizza and more! If you haven't seen any of my other posts, I love artichokes! Here is another recipe to satisfy all artichoke lovers. This Mediterranean Flatbread recipe is easy to make and gluten free! After experimenting with gluten free pizza crust for the first time, I have determined to call it a flatbread rather than a pizza, but I guess you could also call it a thin-crust pizza.

Ingredients
- Gluten free pizza crust (I used Rustic Crust)
- Cucina & Amore Basil Pesto Alla Genovese
- Go Veggie Mozzarella Cheese Alternative
- Cucina & Amore Grilled & Marinated Artichoke Hearts
- Cucina & Amore Sun-dried Tomato
Directions
- Preheat oven to 425°F
- Open the package of gluten free crust
- Spread pesto evenly onto crust
- Add mozzarella cheese thorouglhy
- Line a plate with paper towels.
- Remove the marinated artichokes from the jar and put onto the paper towel
- Use the paper towel to remove all excess oil from the marinated artichokes
- Place quartered artichokes onto the flatbread
- Line a plate with paper towels.
- Remove the sun-dried tomato from the jar and put onto the paper towel
- Use the paper towel to remove all excess oil from the sun-dried tomato
- Dice the sun-dried tomato
- Add diced sun-dried tomato to the flatbread
- Place the flatbread directly onto the middle oven rack
- Bake for 10-12 minutes
- Enjoy!
