This Caprese Quinoa Salad is perfect for a lunch time meal or to bring to your next summer get together. It is a yummy alternative to the traditional pesto pasta salad and probably a whole lot healthier too. Making this meal is super fast because the quinoa is already cooked!

Ingredients
- 1/2 cup Cherry Tomatoes - halved
- 1/2 cup Mozzarella
Directions
- Open quinoa cup from the Basil Pesto Quinoa Quick Meal
- Place the quinoa in a medium-sized bowl
- Chop the cherry tomatoes in half
- Cut 1/2 cup of mozzarella into small bite-sized pieces
- Place the tomatoes and mozzarella in the bowl with the quinoa
- Open the pesto cup from the Basil Pesto Quinoa Quick Meal
- Add as much pesto as you like to the quinoa, tomato, and mozzarella bowl
- Stir until the pesto is mixed evenly
- Enjoy!
